Calling all beer enthusiasts! A new brewery in Ancaster, Ontario is a must-visit this summer and it’s filled with so many unique suds.
Barrel Heart Brewing is situated in a quaint building with rustic charm. With floor-to-ceiling barrels, picnic tables and a colourful bar, it’s the perfect place to stop in for a glass.
The local spot is known for the way they make their drinks. Brewer Mark Horsley produces Belgian-inspired beers made in the Saison style.
The beers are aged in oak barrels that once held wine and refermented on Niagara-grown fruit. The whole process takes well over a year to complete.
This means you can try so many different flavours including blackberry, raspberry, cherry, plum and more.
One of our favourites is their “Washed Away by Sea,” which is a wine barrel-aged Gose with hints of sea salt.

In a press release, Horsley states, “The process is beautiful chaos. For as much control as I might have over the brewing process, each barrel imprints its own flavours on the beer in unique ways.”
When you pop into the Ancaster brewery, you can order a 750 ml bottle to split with your partner and even order a cheese platter to pair it with.
The taproom is currently open Thursday-Sunday. If you can’t make it in, you can also check out their brews online.
Barrel Heart Brewing offers both local and province-wide shipping. Pricing varies and can be viewed on their website.
